Can I use my Paella Burner Indoors
The Paella gas burners are certified only for outdoor use and as such it is not recommended that they be used indoors. If you require a burner for indoor use "professional" range that include gas cut-off valves for indoor use.

How is a Paella Pan Measured

The Paella Pan dimensions that are given on the web
site are the pan's diameter taken from rim to rim (excluding the
handles). If you want to know the base dimension take off about 5cm for pans up to about 46cm.

Polished Steel or Enamelled ?
The 2 main materials for Paella Pans are either the polished steel or enamelled. People often ask which one is best. The quick answer is "they are different" and really down to personal preference. Polished Steel - Very traditional in Spain and virtually indestructible !. My pan has been dropped, cooked over a raging fire and generally abused, and apart from blackened handles (from the fire) is still perfect. The only thing you need to remember is to dry the pan after it has been washed and then wipe it over with a little cooking oil. Cleaning these pans is very easy too - Although they don't have a non-stick surface, using one of those stainless steel pan scourers, cleans the pan in no time. Enamelled Steel - Still very traditional in Spain. They can be used over an open fire (without burning the handles !) or in the oven if it fits. They can be scrubbed with more gentle scourers and will always look as good as new. Their only downside, is like all enamelware, they are susceptible to being chipped if dropped or bashed.
