The pans are manufactured in cold laminated steel, spun to form their pan shape and then enamelled & non-stick coated in the company's own kilns. Garcima use a thicker gauge steel than other manufacturers which produces a stronger pan less susceptible to warping.
Like all traditional paella pans, the base is slightly dished allowing the oil to collect in the centre when frying your ingredients & creating the sofrito. They can all be used on gas hobs, our paella gas burners & open fires. For electric hobs and AGA's we also have a range of "Guison" stainless steel non-stick paella pans with a flat base. Its still a traditional paella pan shape but is ideal for those chefs who prefer a non stick surface to cook on!!!
