Tradiational Valencian Paella
This recipe comes from the experts at Garcima, the manufacturer of our paella pans and sets. In this recipe they use the traditional Valencian white beans "Garrofón", although you could substitute them for cooked butter beans. |
Ingredients (serves 4)
- 400 gr. chiken
- 300 gr. rabbit meat
- 240 gr. green beans
- 160 gr. “garrofón” (Valencian white beans)
- 65 gr. well chopped tomato
- 100 ml. oil
- 800 ml. water
- 20 gr. salt
- 2 gr. paprika powder
- 1.5 gr. saffron
- 350 gr. Rice

Method
Cut the meat in pieces (egg-sized). Pour the oil and when it is very hot, add the meat. When it is fried golden, add tomato and stir everything until it is well fried.
Add the, the paprika .powder. inmediately afterwards add the water, vegetables, saffron and salt. Let it boil for 20 min. (Medium flame)
Add the rice, distributing it very well all over in the “paellera”. Increase the heat for10 min. and let it cook for 10 min. more on a low flame. The rice, already dried, has to be for some minutes in repose before being served.
