Pimientos de Piquillo are some of the most delicious of the red peppers available and are a true taste of Spain. Piquillo peppers from the controlled DO of Lodsa in Navarra form the pinnacle of this dish. To bear the coveted "Piquillo de Lodosa D.O." symbol the peppers not only have to be grown within a specific geographically area, but also have to meet strict high standards for production all vigorously controlled by the regulatory council. As well using them in a paella, they are ideal for stuffing or cold in a salad. When gently fried with olive oil & garlic they make a superb tapa - just make sure you have lots of bread on hand to mop up the juices !
