Our saffron is from Antonio Sotos S.L, one of La Mancha's leading manufactures and one of the founding bodies of the regulatory authority.
The name of saffron comes from the Persian "safra" meaning yellow and is thought to be the oldest used spice by humans. Its cultivation is closely connected to the most cultured and refined civilisations in the oriental world and its spread mimics the progressive displacements of people, from East to West, which made up the different cultures in the Mediterranean Basin.
Saffron was first introduced in Spain during the Arab domination (along with rice!). Arabic cooking was very rich in herbaceous flavourings and saffron was one of the most important spices, used as colouring and seasoning in most of their recipes.
