If you have ever had a true traditional Valencian paella, you would have noticed it included both green beans and flat white beans. These white bean are known as "Garrofón". They are similar to "lima beans".
This cloth sack contains 500g of Garrofón. Simply soak the beans overnight in cold water before use. Them add them with your green beans after the sofrito is made just before the stock is added. The amount of beans to use is not critical but try basing it on around 10-20g of dried beans per person.

I have used these dried beans in 'conventional' Paella and also in vegetarian Paella and Risotto. You may find that soaking for 24 hrs, rather than the recommended overnight, gives them a slightly softer texture when cooked. Again, great price and delivery from the Paella company.
