Aroden (standing for Aromas de la Naturaleza or "Flavours of Nature") is not a business, it is a family. They have been growing olives since the 16th century. Their olive groves are located in the Natural Park “Sierras de la Subbetica”, an area of outstanding natural biodiversity and beautiful landscapes.
The extraction process of CLADIVM does not start in the mill. It starts a year before on the olive groves and ends with bottling – with meticulous care of the trees is essential to obtain one of the finest extra virgin olive oils in the world. The early harvest takes place between the last week of October and the first of November, depending on the maturity of the olives – a vital parameter that is closely monitored. This early harvest ensures the finest flavour, at the expense of yield as early harvested olives contain significantly less oil than late harvest. They are then strictly selected, handpicked and transported within hours of their collection to the mill, where they are transformed into oil in less than 2 hours, using only mechanical methods at room temperature.
Defined by the intense fruitiness of its green olives. On the nose it is distinguished by notes of apple, fresh grass, tomato, green almond, aromatic herbs and banana. On the palate it is very aromatic and persistent, with a sweet almond taste backed up with a peppery finish.
Suggestions for use:
This fragrant oil is best when paired with heavier meals that are rich in flavour. Drizzle over toast, mixed salads, tomatoes, meat, pasta dishes and oily fish.
