Mojo Verde originates from the Canary Islands, in Spain. Mojo Verde is the milder of the Mojo sauces and is made from green peppers, chili, garlic & vinegar. This sauce works very well with grilled chicken and vegetables, but also with fish.
You can even try the authentic way of serving Mojo in the Canaries which is with "Papas Arrugadas" ( wrinkled potatoes). All you do is to boil small potatoes in water, well salted with a good sea salt (see here for our sea salt) for about 20 minutes. Drain them and leave to rest in a pan on a very low heat until all the moisture evaporates and you are left with a salty crust. Then simply top with either your Mojo Picon or Mojo Verde sauce. It make a great tapas or starter.
