Our paella rice comes from ARROCERÍAS ANTONIO TOMÁS S.L. a company founded 40 years ago. Their Santo Tomas brand is recognised today as one premium brands in the market due to its quality.
This is a new rice grown in Navarra in a cooler climate. This strain of rice has a high concentration of "amylose" which is a starch that decreases stickiness and increases the firmness of the rice. This has the effect of making the rice very easy to cook with it also able to be held for a longer time without going mushy. This makes it perfect for caterers at festivals, markets etc.
We have trialed it with several of our caterers and they have all been very impressed by this rice.
It is very similar to cook with as the normal Bahia paella rice using just over 2 times the quantity of stock to rice.
How much rice do I use per person ?
For a "main course" portion use about 100g of dry rice per person. If it is more of a "tapas" size you need - eg it is part of a larger selection of dishes you are serving, use between 80g-85g of rice per person.

very easy to work with in an outdoor catering environment
This rice gives a slightly different 'bite' to a Paella and obviously does not go stodgy if overcooked or left in the pan to be eaten later. Supplied at a very good price, with great packing and fast delivery.
The pack of rice I purchased was the Bomba (`The Rolls Royce of rices`) so this time I thought I would try the `new` rice for comparison. I found the Navara absorbed as much liquid as the Bomba and maintained its integrity throughout the cooking process. I would recommend the Navarra rice.
