Bomba rice is known as the "king of paella rices" and for very good reason. Other rice will absorb around twice their volume in liquid, whilst bomba rice will absorb 3 times - so remember to adjust your liquid to rice quantities to around 3 to 1!
The rice expands in width like an accordion rather than longitudinally, as do other rice varieties, but still the grains remain distinct. This means that the rice is able to absorb even more of the succulent flavours of your paella stock, making that paella even more special. It is grown in the heart of the famous Albufera Natural Park, South-West of the city of Valencia, renown as the best areas in Spain for rice cultivation.

Being located within the park itself they have a privileged relationship with the farmers. This along with continual monitoring and selection ensures the best quality rice is always able to be sourced.

How much rice do I use per person ?
For a "main course" portion use about 100g of dry rice per person. If it is more of a "tapas" size you need - eg it is part of a larger selection of dishes you are serving, use between 80g-85g of rice per person.
This rice uses about a 1 to 3 ratio of rice to stock. So in practice, for every 100g of rice you would use 300ml of stock. For bigger pans or when the paella is particularly thin, you may need to increase this ratio a little more.
